Eggplant Pizza with a Cauliflower Crust

Ingredients for 2 pizza’s

 

 

 

 

 

 

 

 

 

 

 

 

 

Preheat the oven on 220 C° or 428 °F.

1.

Simmer the tomatoes in olive oil.

(the amount of tomatoes depends on how much sauce you need)

2.

Bake the crust mentioned on the package.

3.

Put in the fresh garlic cloves.

4.

Add one teaspoon tomato paste.

5.

Add the basil leaves.

(I plant for this recipe)

6.

Add black pepper and some Himalaya salt to taste.

Let it simmer some more till the tomatoes are soft.

7.

Use the blender to puree the sauce and let it cool down.

ALWAYS TASTE IT.

8.

Add the eggplant, grill until they’re soft.

(no oil needed)

9.

Grilled eggplant.

10.

Jalapeno mix. (I prefer fresh jalapeno, they don’t sell it everywhere)

11.

Anchovies fillets.

(Option)

12.

Add the sauce.

13.

Add the Jalapeno mix.

14.

Add the vegan mozzarella.

15.

Add the eggplant and anchovies and put it in the oven.

(total baking time is mentioned on the crust package (10 min))

     DONE!
